delicious & quick quinoa raw vegan recipe

Are you a quinoa fan? No? My husband was neither, until I served him this easy & delicious quinoa recipe :) It’s raw vegan, because the quinoa is boiled, but the sauce is raw and overall it’s raw vegan, right?

Anyway, it’s still crazy around here, but I decided to give myself half of a day to prepare something satisfying, picture it and publish it. The inspiration behind the raw broccoli sauce came from this pesto recipe by one of my favorite blogs Green Kitchen Stories. I just changed it a little bit to serve my taste buds better and added some treats like roasted pine nuts and my mom’s specialty pickled bishop’s crown chili peppers (recipe coming soon). You can actually skip the chili peppers if you are not a hot dishes fan, but it adds this little twist that makes the whole thing irresistible…

for the quinoa
  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon coconut oil
  • 1/4 teaspoon salt
  • 1/3 cup pine nuts
Instructions:

1. Soak the quinoa for 15 minutes in cold water.
2. Then stir it with your hand and carefully pour off the water using a fine mesh strainer.
3. Transfer the quinoa to a cooking pot with a lid, pour over the water and add the coconut oil and the salt.
4. Bring it to a boil, cover with the lid and reduce the heat to simmer for 10 more minutes.
5. Remove from the hot plate and leave in the cooking pot with the lid on for 5 more minutes.
6. Roast the pine nuts with the hot plate off for 2 minutes.

for the broccoli sauce
  • 1 large broccoli
  • 1/2 cup fresh parsley leaves
  • 1 lime juice
  • 1/2 cup olive oil
  • 1-2 cloves garlic
  • salt to taste
Instructions:

1. Place everything in the blender and blend using the S knife.

Assembling: Place the boiled quinoa in a plate, add the broccoli sauce on top and garnish with roasted pine nuts and chili peppers.

Time for preparation: 20 minutes. Serves 4.

Киноата е древна житна култура смятана за свещена в Южна Америка и една от най-здравословните такива. Тя е богата на протеини, витамини и минерали и не съдържа глутен. Вкусът и е лек и неутрален и може да замести ориза в почти всяко ястие.

Днес съм ви приготвила една супер лесна рецепта с киноа, суров сос от броколи и запечени кедрови ядки. Перфектна за небрежна лятна вечеря с приятели и чаша вино :)

За целта ще ви трябват:

1 чаша киноа
2 чаши вода
1 чаена лъжица кокосово масло
1/4 чаена лъжица сол
1/3 чаша кедрови ядки

Инструкции:

1. Накиснете киноата за около 15 минути.
2. Изплакнете и измийте добре, използвайте финна цедка, за да не загубите малките зрънца.
3. Изсипете киноата в тенджера и залейте с 2 чаши студена вода.
4. Когато водата кипне, затворете тенджерата с капак и варете на слаб огън още 10 минути.
5. Махнете от котлона и оставете със затворен капак за още 5 минути.
6. Докато котлона е още топъл запечете за около 2 минути кедровите ядки на тиганче при изключен котлон, защото загарят бързо.

За соса от броколи:

1 глава броколи без стъблото
1 връзка магданоз
1 лайм, изцеден на сок
1/2 чаша зехтин
1-2 скилидки чесън, по желание
сол на вкус

Инструкции:

1. Сложете всичко с кухненския робот и пасирайте с S ножа за около минута. Не прекалявайте с пасирането, за да останат малки парченца броколи.

Сервиране: Сложете от сварената киноа в чиния, добавете соса от броколи и гарнирайте с кедрови ядки и люти чушлета. Приятен апетит!

  1. I just made this dish tonight and it was delicious! I didn’t have pine nuts, so I toasted almonds…turned out pretty good. Thank you so much for sharing this dish.

  2. I hate to be a party pooper, because I think this recipe looks really delicious, but this is not a raw dish. There is the option of soaking the quinoa overnight to soften it for the meal and keep the nutrients intact, but as soon as you cook it, you can no longer put the word raw in the recipe title. Just wanted to throw that out there as a critique.

  3. Of course, Keekee. I’ve written it – the quinoa is boiled, but the sauce is raw. So it’s raw & vegan, both.
