easy vegan sunday lunch

I’m a big sandwich fan and I like them all – cracker sandwiches, cake sandwiches, basic ones, you name it. So when I spotted the America’s top 10 sandwiches veganized on Namely Marly‘s site I was happy as a kid that just found a cookie :) To tell you the truth I’m not familiar with the american sandwiches, but no matter the name it’s a sandwich, right? It’s easy, unpretentious and delicious, what could be better for a normal sunday lunch? :)

When I make a sandwich I usually just through what I have in the fridge on it and don’t bother too much with the fillings. And this is exactly what I did today too. It’s a mixed seeds bread with cucumber, green salads and an eggplant paste.

The only difference with my normal easy sandwich is actually one also easy and delicious thing – the small black caviar beads. Do you know what they are? Balsamic vinegar. for the salad
  • 1/2 cucumber
  • 1 cup mixed greens
  • a pinch of salt
  • balsamic caviar pearls

1. Using a peeler cut the cucumber into thin stripes.
2. Cut the rest of it and the mixed greens into small bites.
3. Season with salt and fill the greens in the cucumber cups. The cucumbers stick together on their own, there is no need to glue them with something else.
4. Garnish with balsamic caviar pearls.
Time for preparation: 10 minutes. Serves 2.

for the balsamic caviar pearls
  • 1/3 cup balsamic vinegar
  • 1/2 Molecule-R agar-agar package
  • 1/2 cup olive oil

1. Place the olive oil in the fridge for 30 minutes.
2. Mix the balsamic vinegar and the agar-agar and bring them to a boil.
3. Using a pipette drop small drips in the olive oil.
4. Take out and garnish your salad.
5. For preserving the rest of the beads for future use, place them in a cup of spring water and then drain and keep in the fridge.

for the sandwich
  • 1 eggplant
  • 1/3 cup soy mayonnaise
  • a pinch of salt
  • a few cucumber slices
  • a few slices of bread
  • balsamic caviar pearls
  • sesame seeds

1. Cut and bake the eggplant in preheated oven for 40 minutes.
2. Place in a blender with the soy mayonnaise and the salt and blend.
3. Assemble your sandwich by placing the cucumbers first and the eggplant paste on top.
4. Garnish with balsamic caviar pearls and sesame seeds.
Time for preparation: 10 minutes. Serves 2.

  5. YES – I love this! This is why I want a kit, so I can make ‘mock’ caviar. I’ve also seen a chef who does this, but with beets – It’s incredible!

  6. You can make caviar beads with virtually anything! I have some inside tricks for them, will share soon :) But yes, you will need the kit to make them!

  9. Ами да, много е лесно. Станаха за 5-10 минути.
    Агар-агар се продава в био магазините, за аптеки не знам… можеш и да си го поръчаш онлайн от zdravosloven.com, тяхните разфасовки са точно малки пакетчета от по 2 гр. както в молекулярния кит :)

  10. I’m late to the party, but might as well try – how do you get the cucumber “salads” to stay together when they’re picked up? I tried this but the bottom always falls out leading to a mess rather than a salad.
