This Vegan Hummus and Quinoa Pita is a fresh, light bite for a healthy vegan lunch. I used my homemade Summer Thyme Hummus to fill each warm, toasted pita triangle. This meal is simple to make, yet incredibly flavorful. This is a wonderful recipe to finish off the summer season!
All you need is some quinoa (read here how to make fluffy quinoa every time), hummus, pita bread, tomatoes and some fluffy greens. Spinach, watercress, arugula or even kale will work.
You can use store-bought hummus or make my SummerThyme Hummus which is a light and zesty blend of two types of beans, lemon juice, fresh garlic, grape seed oil and sweet summer thyme.
And to make this lunchtime bite even easier – I made the quinoa and hummus the night before. So then in this morning the pita was ready to assemble and stack into a lunchbox in just a few minutes.
