healthy broccoli & spinach soup with beet chips

I’m working on a healthy menu for one of the trendiest new restaurants in town and this cream broccoli and spinach soup is part of it. I wanted to create a healthy cream soup, that is thick enough without adding potato to it, has rich texture and the combination of flavors make it look gourmet, without being too pretentious. I hope I’ve succeeded in achieving that, but the last word as usual will be yours…

The soup uses a combination of fresh onions, garlic, broccoli, avocado, spinach and organic soya milk. Sounds delicious, isn’t it :))) But as every other cream soup it needs something extra, to take it to the next level, like this gorgeous beet chips and the rye croutons.

For the beet chips, you have 2 options – raw dehydrated ones, my personal favorite and the baked version for some fast and easy chips. Just slice the beet with a mandolin, toss the pieces with olive oil and bake | dehydrate. In the oven they will be ready in 10 minutes, the dehydration takes 20 hours…

The croutons are also easy to make, just cut into small bites your favorite rye bread, add dried herbs and olive oil, mix well and bake until dry and crispy. Voila! Your healthy cream broccoli soup is ready to be served and enjoyed :)

cream broccoli soup
  • 1 cup broccoli
  • 1 onion
  • 2 garlic cloves
  • 1/3 cup soya milk
  • 1 1/4 cup water
  • 1 cup spinach
  • 1/2 avocado
  • 1/2 teaspoon salt and black pepper to taste
Instructions:

1. Cut the onion and garlic into small bites, add a little bit of water and cook until the onion starts to soften.
2. Add the rest of the water, the soya milk and broccoli and bring it to a boil.
3. Reduce the heat and simmer for 5 minutes.
4. Add the mixture to the blender, add the rest of the ingredients and blend until nice and creamy.

крем супа от броколи
  • 1 чаша броколи
  • 1 глава лук
  • 2 скилидки чесън
  • 1/3 чаша соево мляко
  • 1 1/4 чаша вода
  • 1 чаша пресен спанак
  • 1/2 авокадо
  • 1/2 чаена лъжичка сол и черен пипер на вкус
Инструкции:

1. Нарежете лука и чесъна на лентички, сипете малко от водата в тенджерка и задушете леко лука докато омекне.
2. Добавете останалата вода, млякото и броколито и кипнете.
3. Намалете котлона и оставете за още 5 минути.
4. Изсипете сместа в блендера, добавете останалите съставки и блендирайте докато не се получи финна крем супа.

За чипса от червено цвекло:
Нарежете 1 глава цвекло на тънки ивици с помоща на мандолина. Добавете към резенчетата 1 лъжица зехтин и разбъркайте добре. Подредете цвеклото в тавичка и печете 10-20 минути, като внимавате да не изгори. За чипса ви трябва конвекторна фурна, с вентилатор.

За крутоните:
Нарежете една филия ръжен хляб на кубчета, добавете сушен босилек, магданоз и малко зехтин. Разбъркайте добре. Изсипете в тавичка и печете за около 10-20 минути.
