A friend of mine, Veronique, just got back from an yacht cruise around Thassos. See, she is a sailor, not a passenger. She even got a captain certificate for yachts and small boats and she is often invited as a sailor on different yacht trips. How cool is that?! For her last cruise around Thassos she was given a cabin for two and she invited me to go with her. Unfortunately I was busy with workshops in Sofia, so I couldn’t go… not cool at all.
Yesterday we met so she can share the experiences and I was surprised with gifts from Thassos. Thanks Veronique! The first one was a small bag with cute little marble stones from Thassos white beaches. It was packed with photos and a note… “I sailed to there, then swam to there… I gathered a little magic and came back to share it with you… because you are my friend… and I hope you always will be.” I hope so too, Veronique, it’s a treasure to have such good friends :)


And now, I want to share a little bit of magic with you too. The magic of Thassos served with raw white cookies and home made jam. Enjoy!

raw cookies
- 1 cup raw almonds
- 1 cup raw cashews
- 1/3 cup coconut flakes
- 1/3 cup liquid sweetener (agave or honey)
- 1/4 teaspoon of salt
Instructions:
1. Soak the almonds for 24 hours and peel them if you want white cookies.
2. Pour everything in the food processor and blend for 1-2 minutes, until it starts sticking together and form a ball. If your sweetener is not liquid, add a little bit of water.
3. Roll the dough with wet hands and cut different shapes with a cookie cutter.
4. Dehydrate for 12 hours at 115°F / 46°C.
5. Serve with home made jam and a cup of coconut milk :)

The cookies are so adorable :] I cannot get over how amazing your photos look! I’ve never been to Greece, but I’ve always wanted to go. I’ve heard so many great things about it. I think I should consider getting a captain certificate. It would be so cool sailing all over the world!
Paulina, getting a captain certificate is huge! Veronique is sailing all summer long and she is constantly invited on different yachts for free :) We are even thinking on renting an yacht for the next summer and sailing around, she will be our captain, you need one to rent a boat :)

Thanks Jennifer! Greece is right next to Bulgaria and for us it’s too close to even notice, it’s only 3 hours drive and you are in Greece. And maybe because it’s too close (I don’t know) we prefer our own seaside :) But if you decide to go one day, I recommend Santorini, Zakynthos or Thassos!

OMG.. You just don’t know how glad I am that I found your site.. I want to eat healthier and become Vegan and eventually raw vegan but I still love sweets.. What I was noticing is there is still white flour in the recipes I see and also lots of sugar.. I been researching for recipes especially deserts that didn’t contain those ingredients and I found your site.. Thanks so much and these cookies here I already have all the ingredients in the pantry so this will work great for me when I need to satisfy my sweet tooth.. Keep the recipes coming. Please don’t forget that these particular cookies are not that sweet by themselves and they need a little bit of jam on top!
If you need something very sweet, try adding more sweetener and make my personal favorite for the summer – the raw ice cream :)

For the nuts – It’s always best if the nuts are soaked and then dried. For this recipe in particular the cashews don’t need to be wet, so you can use normal raw cashews or soaked and dried ones :)

Can I also ask what the texture of these cookies are like? Soft or hard?
They are soft once made and become hard after dehydrated, just like real cookies :)
How could we prepare these gorgeous looking (and surely tasty) sweets if don’t have dehydrator?
Tonita, you can leave them in the fridge for 24-48 hours and they will harden, but in order to make them really crunchy like a real cookie, you’ll have to dehydrate them. If you don’t have a dehydrator, use the oven on it’s lower temperature, most ovens start at 50 °C and the dehydrator works at 46 °C, so open the oven door now and then to reduce the heat.

If you keep the cookies in air tight containers, they can last for a month… like everything dehydrated :)
