The date to our vacation in Bali is slowly approaching and strange questions pop into my head now and then. Like “what are we gonna eat during the 16 hours flight”, “can we bring our own food in the plane”, “am I nuts” and things like that :) For now I have a couple of solutions for the flight, that are fulfilling enough, tasty and light. One of them is this simple & sweet home made granola bar filled with oats, nuts, coconut oil, maple syrup and some coconut sugar.


Sugar is something I haven’t used for more than 2 years now, but when I saw the article for the coconut sugar, I just couldn’t resist to give it a try. It’s made from the sap of the coconut palm, it’s unrefined and has light caramel taste, adorable!


The granola bars turned out so sweet and delicious that I just can’t stop eating them :) They are perfect for an easy breakfast, an afternoon snack, and yes – a long flight. The only problem will be to let them survive long enough for the flight :)
For my bars I used Renee Voltaire’s granola mix. It’s made from baked oats, hazelnuts and raisins, and is naturally sweetened with apple juice.

granola bars
- 1 1/2 cups granola
- 2 teaspoons coconut oil
- 3 teaspoons coconut sugar
- 3 tablespoons maple syrup
Instructions:
1. Blend the granola using the S knife for a minute.
2. Add the other ingredients and blend for one more.
3. Pour the mixture in a small pan and bake for 10 minutes. The idea is just to heat them a little bit, so everything can melt and stick together.
4. Remove from the oven and leave on the counter top to cool down.
5. Enjoy at any time!
Time for preparation: 15 minutes. Makes 10 granola bars.
And here is my printable with pdf version. You can use different paper colors for more variations, I used white rice paper. All you have to do, is print the template onto a standard A4 paper with a color printer and cut between the dots.

YUM!! wow, those look amazing! I am definitely obsessed with having food on plane trips! I really worry (probably needlessly) about not having something healthy to eat especially long trips. My hubby always thinks I’m bringing too many snacks in my carry-on, but I’m going to say, we never ever have anything left by the time we land. I say pack away…make sure you have whatever it takes to make a long trip that much more comfortable. WOW Bali…I’ve never been, but my husband has been on surf trips there many times…he says it’s lovely. Can’t wait to see what you have to say.

Mmmm, looks so delicious! And the wrapping just adds to the appeal! Now, I always carry some healthy snack when we are travelling and next time I will surely make this bars, wrapping included :-)

These bars look very good. A have a similar recipe for granola bar but instead of coconut sugar and coconut oil I use honey and tahini.
