If you follow me on twitter than may be you already know, I have a new addiction! A food one. I’m totally insanely in love with raw banana pancakes and almond butter. They are so delicious, I can’t believe I spend my entire life so far without them! They are addictively delicious. I actually almost sacrificed dinner yesterday for almonds butter and my husband agreed to be distracted by the Excalibur noise as long as there are pancakes in it :), and he really really hates the noise. So if you still don’t trust me – try them for yourself :)
You will need a couple of ripe bananas, almonds, coconut oil, some sweetener, a blender and a dehydrator. Easy, right? The almond butter is kind of solid, because I mixed the almonds with coconut oil and kept it in the fridge, so you can also make a caramel paste to spread it nicely into the pancakes. My inspiration came from Charissa’s blog, but I altered it a little bit to suit my needs and ingredients. And.. I doubled the ingredients, for everything :)


banana crepes
- 4 ripe bananas
Instructions:
1. Peel and blend in the blender until nice and creamy.
2. Pour into unstick-able dehydrator sheets in the form of pancakes.
3. Dehydrate at 145F for one hour and at 115F for 4-5 more hours.
4. Be careful for the timing, it’s important here!
5. Makes 12 crepes.

almond butter
- 2 cups almonds
- 2 teaspoons coconut oil
- 2 teaspoons honey or agave
Instructions:
1. Blend the almonds into flour using the blender or coffee grinder.
2. Then mix it with the coconut oil and blend again using the S knife for 5-6 minutes.
3. When the oil is ready, add the sweetener and mix again for 30 seconds.
4. Pour into a nice jar and enjoy at any time!

caramel paste
- 2 cups dates
- 3 tablespoons almond butter
- 3 tablespoons spring water
- 1 teaspoon maple syrup, optional
Instructions:
1. Blend everything together until nice and creamy.
4. Pour into a nice jar and enjoy at any time!
Serving suggestions: butter the pancakes with the caramel paste and add some berries.


Oh my gosh – This is wonderful and the photos are incredible!! I’ve never made plain banana pancakes/crepes, but this kind of inspires me to. So many options!

Those look amazing! Oh my goodness, I would love to try to make these. I have tried to dry bananas with my dehydrator before but they don’t look like this, they always turn out leathery because I can’t adjust the settings :( I will be saving the recipe though. Maybe one day I’ll get an excalibur :D
May be there is something wrong with the timing? When I make fruit leather I dehydrate for 8-10 hours and the crepes need only 6 hours dehydrating.
I’ll try to keep a better eye on them. I wonder if the heat has anything to do with it because I have no idea what the temperature gets up to. I will try again for sure and just watch them better :)
You amaze me Nadia! These are beautiful…and they look not only delicious, but they’re raw. I used to only eat raw food, and this makes me think I need to do that more.

Wow, these look fantastic. I am in my last few days of a 30 day juice fast and I plan to break my fast with watermelons and cantelopes for one day, then eat all raw for probably 30 days before I eat anything cooked again. So I’m sitting here making a list of what I want to eat…and these will be at the top of my list. I am bookmarking now so I can find this again…Thank You!!

Надя, моят първи опит с бананови палачинки не беше успешен. Какво правиш, за да не потъмнеят бананите – на петата минута вече си променят цвета, независимо на каква температура са? Аз от един банан успях да направя три палачинки, но са доста тънички – тези мехурчета, които се виждат на твоите снимки как се получават? Слагаш ли сода или нещо подобно? Или може би трябва да замразя бананите преди да ги пасирам, за да станат на кремообразна субстанция, а не като боза? Много ще се радвам, ако споделиш опита си. Хубав ден!
Мария, тези палачинки са правени в дехидратор, само уточнявам, не на фурна и не на котлона.
Бананите потъмняват, да, моите също са леко тъмни, като на снимката. Пасирам само банан в шейкър каната на блендера, банана трябва да е много мек и узрял, не се замразява и не се добавя нищо друго. 6 часа по-късно стават наистина тънки и хрупкави, но това им е хубавото :))) Като размер не мога да преценя колко са, защото аз винаги правя мини палачинки и стават много. Успех следващият път!
