I have some great news to share – my niece is coming to visit us for a month and this time she is bringing her boyfriend with her! It’s a huge event for our family, because we get to see them very often, once in 2-3 years. See, my brother lives in Canada and I live in Europe, some 3000 miles away… Me and my brother have a big difference in the years, he practically raised me, then got married and now has two lovely daughters which I adore – Alina & Katrin. They are both in the University now and Alina is spending her last couple of months in France as an exchange student, from where she will arrive directly to Bulgaria and will spend a whole month here. Yay!
How does that relate to pineapples you may ask? Well, Alina’s boyfriend – Andre is a brazilian and I decided it will be nice to welcome him with some traditional brazilian meals, so I started checking their native fruits and vegetables and was surprised to see that the mother of the pineapples is actually Brazil. A fruit I can buy here freely and experiment with it :). My idea is also to prepare for them mainly raw dishes, since it will be summer and we all eat light in the warmer months. Finally, one of the desserts I made up was this delicious raw pineapple dessert. It’s pretty easy to make, tastes like a warm day on the beach and is the perfect ending for any exotic dinner party. Yum!


raw pineapple dessert
- 1/2 pineapple
- 1 cup raw almonds or cashews
- 2 teaspoons coconut oil
- 2 teaspoons honey or agave
- raspberries jam & hyacinth for garnishing
Instructions:
1. Soak the nuts for 2-6 hours.
2. Peel the almonds or use the cashew as it is, pour the water out and blend.
3. Add the coconut oil and the sweetener and blend again.
4. Cut 4 pineapple slices using a metal ring or a cup.
5. Remove the core using a knife or a small metal ring.
6. Place one of the pineapple slices on the bottom of the metal ring or in a cup, press half of the nutty mixture on top and add the other slice of pineapple.
7. Keep in the fridge until ready to serve.
8. Garnish with raspberries jam and some edible flowers.

Но докато това се случи, ето ви една слънчева рецепта, от която лъха лек аромат на цветя и ананаси… Наследете и се с чаша плодов коктейл в ръка, затворете очи и се пренесете поне за малко в родината на ананасите Бразилия!
Ароматен плодов десерт
1/2 ананас
1 чаша сурови бадеми или кашу
2 чаени лъжици кокосово масло
2 чаени лъжици мед
сладко от малини
Време за приготвяне: 10 минути. Порции: 2
Инструкции:
1. Нарежете ананаса на шайби без да го белите предварително, използвайте метални рингове или чаша. За две порции ви трябват 4 шайби ананас. След като нарежете ананаса махнете сърцевината му внимателно с помощта на нож или малък метален ринг, защото тя остава твърда и придава леко стипчив вкус.
2. Накиснете бадемите или кашуто за 2-6 часа.
3. Обелете бадемите (кашуто се използва както си е), изцедете водата и сложете в блендера. Миксирайте докато ядките не се натрошат добре.
4. Добавете меда и кокосовото масло и блендирайте отново или разбъркайте хубаво на ръка.
5. Сложете едната шайба ананас в метален ринг или чаша, изсипете отгоре половината ядкова смес, притиснете добре с помощта на лъжица и сложете отгоре втората шайба ананас.
6. Оставете в хладилника да стегне за минимум 1-2 часа или за през нощта.
7. Внимателно махнете металният ринг или изсипете десерта от чашите.
8. Сервирайте със сладко от малини :)

This looks s pretty and pineapple is available year round in the Caribbean. I don’t eat raw only but it’s always good to add more fruits and veggies to one’s diet.
You sure do! The pineapple is also the only fruit that’s great for the digestion after a meal :)
