Do you remember the amazing smell of warm cookies early in the morning from your childhood. I do. My mom used to bake these delicious russian tea cookies, made with white flour and sprinkled with sugar. The aroma was breathtaking. Your whole day used to be a lot warmer and calmer when started like this. You and your family having breakfast in the kitchen, laughing, making silly jokes and eating this tasty treat…
Sometimes when I pass by a bakery shop on the street the flavors coming from there make me wish to turn back the time, to be that small silly girl again, sitting in my parents warm kitchen, eating russian tea cookies. But I will never be that small girl again. The healthy lifestyle changed a lot. We no more eat or cook with white flour, we don’t use table sugar, white, brown, whatever and we try to keep it vegan, meaning no eggs and milk in the cookies either. Sounds tricky right?
But not impossible. Just think alternatives. The white flour won’t miss you if you use corn’s one, the sweeteners are endless – honey, agave, stevia, lucuma, blackstrap molasses… The refined sunflower oil tastes like shit compared to pure coconut oil and olive oil. The cookies fill the house with the same warm and welcoming smell and definitely taste like heaven…
- 2 cups corn flour
- 1 teaspoon baking soda
- 1/3 cup honey
- 1/3 cup blackstrap molasses
- 1/3 cup coconut oil
- a dash of coriander
- a dash of powdered ginger
- a pinch of salt
- 1/2 cup chopped raw pecans
1. Preheat the oven to 180 °C
2. Using a large bowl mix the honey, molasses and coconut oil.
3. Add the dry ingredients and mix well.
4. Add the pecans.
5. At this point the mixture won’t stick together nicely, so using your hands make small cookies and place them on the baking sheet.
6. Bake for 10-12 minutes.
Time for preparation: 30 minutes. Makes 20 cookies.
