Yesterday I bought some fresh and local pomegranates (to tell you the truth I didn’t knew pomegranates can grow in Bulgaria, but the world keeps surprising me all the time) and after lots of thinking decided to make 2 recipes with them – one salad and one dessert :)
The salad became so refreshing and yummy, that I will surely make it over and over again. And it looks really cool, so it will be an amazingly beautiful guest welcome touch. If you happen to expect guests any time soon – try it for sure!
pomegranate & greens
- all the greens you can find
- 1 sliced carrot
- 1/2 pomegranate
- 50-100 gr. mozzarella cheese or tofu
- pinch of salt, olive oil and balsamico
Mix the leafy greens, I used baby spinach, arugula, radicchio & chicory. Add the sliced carrot and the pomegranate seeds. When you cut the pomegranate it releases a fresh red juice, use it in the salad too. Cut the cheese into small bites and add it to the mix. Then season with salt, olive oil and balsamico vinegar. Mix well and serve :)
