Pancakes are my husband’s favorite dessert and at least once a week there is the question “When will you make some pancakes?”. And as you can imagine the answer most of the times is “in the indefinite future”… (may be I’m not the perfect wife after all :)
But this weekend I decided it’s about time to please him with his favorite dessert and the search for pancakes made without flour and milk began. It turned out that pancakes made with bananas and eggs is a common recipe for the gluten-free eaters and I gave it a try. The result was delicious, rich and tasty. So here they are:
Ingredients:
- 3 bananas, smashed with a fork
- 6 eggs
- 1 table spoon with whole wheat flour (I added it just in case, all habits die hard)
- coconut oil
Mix everything together, fry both sides with coconut oil, garnish with blueberries and sliced almonds and you are done!
P.S. Next time will try to make them without the flour and will add some more fruits, like berries, coconut, pineapple, etc.
